Fresh Fish—More Than “Caught Today”

Freshness is more than the date of harvest

Imagine two fish. The first was harvested this morning but remained in the sun for several hours. The second was harvested yesterday, immediately chilled and kept cold throughout its journey. Which one is fresher?

Scientifically, the second fish may be in better condition. This is why “caught today” does not tell the full story.

In simple words, freshness tells us how much of the fish’s original quality has been preserved after harvest.

Once a fish is harvested, natural changes begin immediately. The energy inside its muscles starts breaking down, enzymes slowly change the flesh, bacteria begin to multiply and fats may react with oxygen. These changes cannot be stopped completely, but clean handling and low temperatures can slow them considerably.

This means that “fresh” cannot be determined by time alone. A fish handled hygienically and chilled rapidly may retain better quality than one harvested more recently but left at an unsuitable temperature.

Four ideas that should not be confused

1. Freshness

Freshness describes how far the fish has progressed from its original post-harvest condition towards deterioration.

2. Food safety

Safety concerns hazards that may make a person ill, including pathogenic microorganisms, toxins, parasites and chemical contaminants. A fish may look acceptable but still be unsafe if it has been contaminated or temperature-abused.

3. Quality

Quality includes freshness, but also covers appearance, flavour, cut, texture, size, processing, packaging and suitability for a particular recipe.

4. Shelf life

Shelf life is the validated period during which a product remains safe and acceptably fresh under stated storage conditions. It is not simply a date selected for convenience.

Is frozen fish less fresh?

Freezing and freshness are not opposites. Freezing does not restore freshness, but prompt and properly controlled freezing can slow microbial, enzymatic and chemical deterioration. Fish frozen soon after harvest may preserve more of its original quality than poorly handled chilled fish.

Can freshness be proved by one test?

No single measurement provides a complete answer. A scientifically sound assessment normally combines:

·        Harvest and traceability records

·        Time–temperature history

·        Sensory assessment

·        Physical measurements such as firmness and drip loss

·        Biochemical indicators such as K-value or TVB-N

·        Microbiological evaluation

The Food and Agriculture Organization divides fresh-fish quality evaluation broadly into sensory and instrumental methods. These approaches are most useful when they support one another rather than being treated as substitutes.

What should consumers expect?

A credible freshness claim should answer four questions:

1.        When and where was the fish harvested?

2.        How quickly was it chilled or frozen?

3.        Was the required temperature maintained throughout distribution?

4.        What checks were used to verify its condition?

Freshness should therefore be treated as a measurable condition supported by records and testing, not merely as an attractive word on a label.
